SIÓ Negre 2018 Organic Wine
"This wine made mostly of old Mantonegro vines was conceived as a tribute to our grand- mother Sió (or Concepció), who was the one who backed up the modernization of the winery by her daughters, a little over 3 decades ago. Our priority is to obtain the balance of the wine directly from the vineyard. The Mantonegro variety stands out for its great aromatic expressiveness, but tends to produce wines excessively warm, oxidative and with a high alcohol strength. With Sió, we look for concentration and varietal tipicity without giving up freshness. That can only be achieved with the appropriate management of the old vines. The characteristic river stones that cover the vineyard of Can Ribas help counteract the adverse climate effects and to avoid strong differences between vintages."

Barrel Type: 50% New French oak and 50% second year French oak from Ribas de Cabrera (225 and 500 L)

Production: 58.000 bottles of 0,75L / 1.500 Magnums of 1,5L / 90 Double Magnums of 3 L / 45 Imperial bottles of 6 L
The grapes are harvested by hand before being strictly selected, one by one, at the triage table, from our oldest vines of the native Mantonegro, a variety with amazing aromatic potential that adds fruit and warmth. Complemented with 25-year-old vines of more structured varieties as Syrah, Cabernet and Merlot.
Color: Bright cherry red with a hint of purple.
Nose: Powerful and complex aroma with dominating black fruit aroma, with mineral and balsamic notes as well as spices (nutmeg, cinnamon, cocoa).
Taste: Quite fresh in attack, very well balanced on the palate with sweet and velvety tannins. Complex wine, rich in nuances, very representative of the Majorcan terroir.
Suggestions: Red meat stews, grilled meat, Iberian cured ham, cured cheeses.
