Mistral Coffee was founded by Greg Schuler and Agata Mikulska with a singular goal to make Mallorca as famous for coffee as it is for its beaches.As a speciality coffee roaster the coffee we source is at the heart of the entire operation. By paying higher prices and establishing close relationships with the farmers the end result is a cared for product and therefore exceptional coffee. We are roasting on a 12 Kilo Probatone from Probat. For us the roasting process is entirely about highlighting the unique and sometimes subtle nuances of the coffee we have. We are continuously refining our roastery and investing in the latest roasting technology from our partners at Probat. We create individual roast profiles that promote the greatest aspects of the green bean.
