OUR CACAO
Most commercial cacao is roasted at high temperatures to simplify processing and extend shelf life. However, the intense heat destroys many of the plant’s natural health benefits.
At Cachao, we only use unroasted cacao, gently processed to preserve its full spectrum of nutrients and complex flavours.
A key step in our process is melanging—from the French mélanger, meaning “to mix”—which involves grinding the cacao using a melanger, a stone grinder with rotating granite wheels. During this phase, raw cacao beans or nibs are transformed into chocolate liquor (also known as cocoa mass), a thick, smooth paste that naturally contains both cocoa solids and cocoa butter. This slow, precise method protects the cacao’s antioxidants, enzymes, and micronutrients—delivering purity, depth of flavour, and uncompromised quality
Our cacao is sourced from organic, sustainable farms in Peru and Ecuador, where it grows naturally among mango, pepper, vanilla, and coconut palm trees. Using traditional cultivation and harvesting techniques, local farmers work in harmony with nature, which reflects our philosophy.

LOCAL INGREDIENTS
As much as possible, we use fresh ingredients sourced from local organic farms in Mallorca.
As purists at heart, we are committed to preserving nature’s integrity—working only with producers who share a deep respect for the land and the food they cultivate. Fruits, herbs, and nuts are harvested at their peak and processed locally or on-site to preserve their full flavour and nutritional value.
While coffee and cacao do not grow in Europe, we apply the same principles to sourcing these essential ingredients. We work exclusively with organic farmers and cooperatives whose values align with ours—ensuring transparency, sustainability, and uncompromising quality.

Health benefits
Raw cacao is one of nature’s richest sources of magnesium and iron, essential minerals that support energy levels and overall vitality. It also contains chromium, which helps the body maintain balanced sugar metabolism.
Our cacao is especially high in flavonoids—plant compounds known for their antioxidant properties. These contribute to healthy circulation, support the body’s natural defenses, and help protect cells from everyday stress.
Another naturally occurring compound in cacao is theobromine, a gentle, long-lasting stimulant that promotes mental clarity and a subtle sense of physical energy.
Many experience a noticeable lift in mood and focus shortly after consuming raw cacao—one of the reasons it has been cherished for centuries.
ROOTS
Cacao is harvested from the fruit of the cacao tree and is the basis of chocolate. Due to its many natural properties and multiple uses, cacao has been cultivated for thousands of years by the mesoamerican civilizations distributed throughout Mexico and Central America. The elite men of the Aztec and Maya societies consumed cacao primarily in the form of a frothy beverage, during ceremonies that would grant them energy and power and in rituals to appease their deities.
The first europeans to “discover” chocolate were the Spanish in 1519 when Cortés met with The Aztec Emperor Moctezuma in Tenochtitlan. Later on in 1544 a Mayan nobleman named Kekchi Maya was brought from the Americas to meet King Phillip where he formally presented the frothy cacao beverage of the gods to Spanish court. Within a century, chocolate had made it to the rest of western europe and England. Demand grew quickly leading the French to set-up plantations in their Caribbean colonies and the Spanish in their South American and Philippine colonies.
Today we consume cacao mostly in the form of chocolate- mixed with sweeteners to reduce the natural bitterness of the flavour. Traditional beverages made with cacao are still consumed in México, Central and South America and can be prepared quite easily.
